Summer Corn & Tomato Salad

Ingredients

  • 4 ears fresh corn
  • 2 cups halved grape tomatoes
  • 1/2 teaspoon finely minced garlic
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh basil, cut in thin strips
  • Salt & fresh ground pepper

Directions

Microwave corn in the husks for 6 minutes. Shuck corn and remove silk. Cut kernels off the cob. Combine the minced garlic, lemon juice and olive oil, whisking to combine. Combine corn, tomatoes and fresh basil in a bowl. Pour olive oil mixture over the mixture in the bowl. Gently mix the ingredients together. Season the salad with salt and fresh ground pepper to taste. Add fresh basil to bowl, mix well and adjust seasoning. Serve chilled. Serves 6-8
