Red Curry Roasted Okra

Ingredients

  • 4 cups fresh okra, stems trimmed
  • 2 tablespoons vegetable or canola oil
  • 1 ½ teaspoon red curry paste
  • 1 teaspoon fresh grated ginger
  • Salt & pepper

Directions

  1. Preheat oven 400 degrees.
  2. Combine oil, red curry, ginger, salt & pepper in a medium-size bowl.
  3. Add okra and toss to coat okra with mixture.
  4. Spread out on a baking sheet.  Place baking sheet in preheated oven.
  5. Bake 15 minutes then turn okra over and bake additional 10 – 20 minutes or until desired crispiness.

 

  • Serves 4 – 6.
