Ingredients
- 4 cups fresh okra, stems trimmed
- 2 tablespoons vegetable or canola oil
- 1 ½ teaspoon red curry paste
- 1 teaspoon fresh grated ginger
- Salt & pepper
Directions
- Preheat oven 400 degrees.
- Combine oil, red curry, ginger, salt & pepper in a medium-size bowl.
- Add okra and toss to coat okra with mixture.
- Spread out on a baking sheet. Place baking sheet in preheated oven.
- Bake 15 minutes then turn okra over and bake additional 10 – 20 minutes or until desired crispiness.
- Serves 4 – 6.
