Shiitake Mushroom & Rice Noodle Bowl
- 1 Recipe Shiitake Mushroom Salad
- 4 – 6 Ounces rice noodles, soaked and drained
- 1 Tablespoon toasted sesame oil
- ½ Cup julienned carrots
- Toasted sesame seeds, for garnish (optional)
In a medium skillet, heat sesame oil over medium heat. Add carrots and cook 1 – 2 minutes or until just beginning to soften. Add mushroom salad to skillet and continue cooking 1 – 2 minutes or until mushrooms soften. Combine mushroom mixture with drained rice noodles and Serve cold, room temperature or hot. Serves 2 – 4.
