Georgia Shiitake Mushroom Salad

This shiitake mushroom salad features mushrooms grown in Georgia, with Chinese-inspired flavors like sesame oil, scallion, soy sauce and rice vinegar, inspired by our friends at The Shack of Ellijay. Eat this salad hot or cold, on its own, or atop a bowl of rice or noodles, and use the leftovers in a simple veggie-packed stir fry or soup. Find Georgia Grown mushrooms like shiitakes, oysters, and more at your favorite farmers market, produce stand, or at Atlanta area Whole Foods!

Shiitake Mushroom Salad

  • 4 Cups thinly sliced shiitake mushrooms
  • ½ Cup thinly sliced scallions
  • ¼ Cup tamari or soy sauce
  • 2 Tablespoons toasted sesame oil
  • 3 Tablespoons rice vinegar
  • 1 Teaspoon chili garlic sauce
  • Black pepper

 

In a small bowl, whisk together tamari, sesame oil, rice wine vinegar, chili garlic sauce and black pepper. Place mushrooms and scallions in a medium bowl. Pour dressing over mushrooms and scallions and toss to coat. Let mixture marinate for 20 – 30 minutes. Can be served cold or at room temperature. Serves 4 – 6.
