Ingredients
- 4 cups diced onions
- 1 tablespoon minced garlic
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 teaspoons Kosher salt
- 1 teaspoon black pepper
- 2 8-ounce cream cheese
- ½ cup mayonnaise
- ½ cup BBQ sauce
- 2 cups shredded cheese (whatever type you like)
Directions
Preheat the oven to 350 degrees.
Heat a 10-inch *cast iron skillet over medium heat. Add the olive oil and the butter to the pan. Once the butter has melted, add diced onions to the skillet. Cook onions for 5 minutes, then add minced garlic, salt & pepper. Stir well. Allow the onions to cook until they turn golden brown, stirring often. This should take about 20 minutes. Add cream cheese, mayonnaise, and BBQ sauce; mix well. Cook until the cream cheese is melted. Top the mixture with the shredded cheese and bake until melted. Serve with crackers or French bread. Serves 12 – 16.
*If you don’t have a 10-inch cast-iron skillet, use a regular skillet and transfer the mixture to a casserole dish before topping with cheese and baking.
