Elusive Jams

Our story started with a sip of a Fig Old Fashion during an anniversary dinner in an Atlanta restaurant. Intrigued by it's complex, yet southern taste, I sought to recreate the bourbon concoction at home. After a few attempts, I was left with a small batch of figs that were infused with the sweetest vanilla and smoked oak notes. Coming from a lineage of master jelly and fruit preservers, I could not toss the delicious fruit. So I applied an old family pear preserve recipe with a few different spices and dark sugar and our Fig Bourbon Jam idea was born. This flavor was a 2019 Flavor of Georgia Finalist and is still our best seller. Since then, we have crafted over 25 more unique flavors including Apple Whiskey, Spiced Apple Pecan, Smoked Strawberry, Spiced Pear, Strawberry Mango Margarita, Maple Blueberry Whiskey, Peach Pecan Praline, Blackberry Bordeaux, Strawberry Fig Jalapeno, Mayhaw Amaretto Pepper Jelly, Dark Chocolate Strawberry Merlot, Muscadine and many more. Just recently, our PEARadise Jam was named a 2023 Flavor of Georgia Finalist. Our jams can be found in select boutiques, restaurants and wineries across the southeast. We even craft an exclusive wine pepper jelly for Three Strands Vineyard in Dallas, Georgia that they feature on their charcuterie boards and flatbreads. In 2019 we purchased an old dairy farm in West Georgia. The fertile soil and Little Tallapoosa River provide excellent conditions for our orchard, vineyard and berry fields. Two years ago, we started planting rare fruits like quince, pawpaws, loquats and jujubes. We grow most of our own fruit for our recipes but also source from farmers across Georgia. Recently, we started beekeeping and have seen a significant increase in our crop yield. This year we will offer porch pickup for our honey and excess fruits and vegetables.
