Find LocallyAll snug in their pods, peas are a cool-season crop. Garden, snap, sugar and snow peas all go into the ground about the same time (January – March), but they’re harvested as they individually ripen. This is called “picking the vines.”
Originally from West Africa, early colonists quickly recognized how well field peas adapted to Georgia soil. Since then they’ve become a Southern staple. In fact, in the popular cookbook, Southern Cooking, there’s a recipe entitled “Field Peas a la Georgia.”
